Learn how to find, recognize, and identify this winter edible fungus: Amber Jelly Roll Mushroom (Exidia recisa)! Being easy to find makes it a great survival food if not an under appreciated edible mushroom that may not have avery appetizing look to it! Jelly mushrooms are fascinating as they do not fit our typical vision of what a mushroom looks like. Mushrooms are fruiting bodies of fungi that are hidden from our view inside rotting wood or under the soil. These mushrooms, or fruiting bodies, produce the reproductive spores for this species to continue and to spread. Amber Jelly Roll is one of several edible winter fungi that can be found but not as popular as oyster mushrooms or wood's ear. Typically Amber Jelly roll can be found on sticks laying on the leaf litter. It has an obvious amber colored jelly-like look to it when hydrated and turns a darker black when dry and looks somewhat like raisins. Always fascinating to take a walk in the forest, even in winter, and discover many fungal species.
