@SamoK In store-bought bread there are about 30 different ingredients (far from just flour, yeast, water and salt). Plus industrial bakeries bake about 1.8kg of bread from 1kg flour (at home about 1.3kg). A baker explained this to me, now he only bakes bread at home. Anyway, homemade bread from "industrially processed wheat flour" is still much healthier than any bought in the store, regardless of eco and bio labels. Otherwise, as said, if a caveman came to today's environment he'd die quickly, not because of red meat, milk, white flour (and similar things lately labeled as the worst evil in some articles) but mainly because of polluted environment (water, air) and countless chemicals in food. p.s. I'd ask older generations, do you still remember how delicious the rolls were at fine and meat bakeries about 20-30 years ago? Today you won't get rolls with such good taste in any bakery, even smaller ones. Today all stores, supermarkets get ready dough-mixtures, deep frozen, and then finish baking them in the supermarket. Just look at the bread sections in supermarkets, each has STIKEN-ovens for quick baking. Unfortunately even smaller bakers use this dough that contains preservatives and stabilizers, that's how it is today with this turbo-capitalism.

Zdomec, I agree with that. Such good rolls and also bread are no longer available. Otherwise folks shouldn't worry so much what's in the food and what's not, because worry will kill you before the food does. If everything was so harmful, life expectancy wouldn't have increased by almost 10 years in the last 30 years. Oh, and one more thing. No healthy person has died yet, but everyone dies.

Becar, and what does longer life expectancy mean for the overweight, cancer patients, diabetes and other civilization diseases? That's dragged-out living! Healthy food definitely improves your quality of life. I don't understand why worry if you prepare food yourself from ingredients you trust, preferably ones you've at least seen being produced, if you didn't produce them yourself.

Gorolazka, congrats on the excellent choice of flour mix for healthy bread. On top it was even ground in the eco mill Stražar on classic mill stones. That's a model example of healthy homemade bread. Enjoy!

Gorolazka, I would choose baking powder on mill stones instead of yeast, that's even more bio variant. I've done it several times, and it's great.

SamoK, that's your opinion. Mine is that strained living is constantly scrutinizing what I can eat and what not. Best to start eating only pills that will have just the right amount of all substances for "healthy" life. Daaam, that someone healthy died, I don't know anyone, if nothing else, autopsy shows they weren't as healthy as they seemed. But I know cases of people who "watched themselves" all their life, god forbid sausage or roast, pork, never drank, smoked, died quite early. Causes were elsewhere. And that makes me think. More than food kills unemployment, systematic impoverishment of citizens, ruined social relations, bullying at workplaces etc.

Becar, you see healthy eating and health as a necessary evil. Read the posts of Gorolazka and Primož, who are experts in healthy eating and cleanliness in nature. Obviously you haven't been to the Oncology Institute yet, which is too small due to the large number of cancer patients. Consequently you don't know how horribly these patients endure chemotherapy. Most of this disease is caused by harmful diet and toxins in the air and living environment. We can at least protect ourselves a bit with healthy eating and cleanliness.
